The game's name (which is used to name the save folder) is set in "Game > Change Title...". The name of the folder that the project is in doesn't matter.
A map's name can be gotten with:
pbGetMessage(MessageTypes::MapNames,42)
where 42 is the map's ID number. The phone does this (as does $game_map.name itself, of course).
You're playing in Debug mode. That's a Debug feature.
Odds are the evolved species will have been defined to be single gender (e.g. Wormadam/Mothim/Froslass/Vespiquen), in which case the Pokémon will become that gender upon evolution. The species should have been defined this way, so that generated wild/trainer Pokémon of that species are always of the correct gender.
Why would you do what you're suggesting?
Is that supposed to be the actual National Dex, or did you just rename the Kanto Dex to that and expect it to work?
Sounds like something on your computer has changed which program is used to open that particular file type. You really need to fix that.
That (or something like it, I don't quite remember) is a known bug. There is a solution in this forum somewhere.
You can do anything if you code it. There is no such feature already in Essentials.

That's why there's a specific method to do map transfers while remaining underwater. It's detailed on this wiki. Try reading.
Did you have a look in the example maps that come with Essentials? There's a water map with a couple of swimmers in there.
Specifically what kind of delay are you experiencing? Moving the cursor to a new line in a list of commands? Or are you just complaining that some lists (like the list of species) are long and it takes you a while to scroll down to what you want?

I suggest you undo that change, and instead go into script section "PTrainer_NPCTrainers" and find the two lines which mention "poke[TPFORM]". Make the first line say "pokemon.forcedForm = poke[TPFORM] if " and delete the second line.
Then go to script section "PokeBattle_Battle" and find the mention of "forcedForm". Make it say "pokemon.forcedForm = nil if " instead.
